BUFFALO CAULIFLOWER WITH BLUE CHEESE BUTTERMILK CREMA

BUFFALO CAULIFLOWER WITH BLUE CHEESE BUTTERMILK CREMA

From Bluecoast Seafood Grill

Ingredients

½ cup buttermilk

½ cup sour cream

4 Tbsp blue cheese crumbles

½ fresh lemon, squeezed

3 Tbsp olive oil

¼ cup of your favorite hot sauce

½ fresh lemon, squeezed

1 head cauliflower, broken into florets

¼ cup celery hearts or micro-celery for garnish (optional)

 

Directions

Heat oven to 400°. 
 

For the crema: In a small bowl, add buttermilk, sour cream, blue cheese crumbles and lemon juice. Mix well. Chill until ready to serve.
 

For the cauliflower: In a large bowl, combine cauliflower, hot sauce, lemon juice and season with salt and cracked pepper. Toss and spread on baking sheet. Roast for 25 minutes, until cauliflower is tender and slightly browned on the edges. 
 

You can serve cauliflower hot or at room temperature. Spread blue cheese crema on a large platter. Place cauliflower in the center of the platter and garnish with any extra blue cheese crumbles and baby celery. Enjoy!
